At 23, Victor Garcia is the new butcher boy at Les Halles

Since August 15, the young man from Nîmes, together with his friends, has been running a stall.

Between cook and butcher, his two initial trainings after a general baccalaureate, for a long time, Victor Garcia's heart wavered: apprenticeship at Lisita, experience at Mas des Agriculteurs… So, when his father, Vincent Garcia, a well-known tobacconist in Saint-Césaire, and their friend Thibault Tardieu, who runs the Amiral tobacconist on Boulevard Courbet, told him about a stall for sale at Les Halles, allée de la Muscade, he didn't hesitate for long, the three managers seizing “the opportunity”, straight away. On August 15, the young man, barely 23 years old, inaugurated his bench, nicely named Les Garçons Bouchers. “And, when I found the name, I didn't know that a hard-rock band was called that!”, he laughs.

“Quality meat at an affordable price”

With his family (his employee was his former apprenticeship master), the Nîmes native therefore took his first steps as an entrepreneur. “We are the successors to Mikael Gillion, who ran the Butcher's in Nîmes and who is now concentrating on his business in Uzès. We have done some work, some painting.”

While refining the identity of the butcher-delicatessen-caterer business: “Quality meat at an affordable price. I want to stand out in this way. We are looking for customer sympathy. I am a boss who listens.”

Victor Garcia focuses on exclusively French meats: “The lamb comes from Sisteron, the beef and veal from Aubrac. My father, who is a trained cook and was a caterer for a long time at Croix-de-Fer, cooks paupiettes, lasagnes, cannellonis, etc. It's a butcher's caterer, 100% homemade.” In the tradition of this family stall, which is off to a good start. At Les Halles, the customers are already there, there is always someone to linger in front of the counter, to show curiosity. Today, we need to perpetuate the butcher's shop, emphasizes Victor Garcia. And why not, later, around 2029, export around the Halles. We are thinking about it right now."

Major renovation work on the Nîmes food temple is scheduled for January 1, 2030, for a duration of 18 months.
