Thomas et ses spiritueux dont des whiskys rares et choisis.

There are some surprising reconversions! That of Thomas, 36 years old, new manager of the Cave du Boutonnet is striking as his professional past may seem far removed from his new profession. However, when we dig, we find many warning signs. His long university career, at the highest level (he is a doctor of science!) reveals very useful appetites and skills for his new profession.

At the beginning, during his degree in biology, he aimed for the oenology diploma which he ultimately did not enroll in, as his studies fascinated him so much. He then embarked on a master bio, followed by three years of thesis (2013): "The profession of researcher me passionate, the functioning of the world of research less, in particular the pressures for publications". At the same time, he experimented with teaching: "I loved it, managing a team and transmitting knowledge in my own way".

But the move to a private medical competition preparation school, where he could not use his pedagogical creativity, led to disillusionment. In 2018, the time to take stock has come. That "of a desire to be my own boss". The one-year internship at Apec allowed him "to clarify things. The idea of being a wine merchant was a revelation”, he says. He therefore works at a wine merchant extra on Sundays, then alternately during the year in 2020-2021 and is preparing a professional qualification certificate. "It's going very well and confirms the idea of retraining for good reasons, not just to escape the professional world", recalls- he.

The idea of leaving Paris, where he has always lived, has been running through his head for ten years: "A real need to change life, to change scenery", he specifies. He therefore takes over the cellar at the end of 2023, in the organic, biodynamic and nature niche launched by Laurent, his predecessor.

"An organic product for €5, with added advice"

Which retired with elegance, Thomas appreciates: "He introduced me to his loyal customers and accompanied me for the start". Thomas completes the background with some new features. Knowing that 80% of wines are regional. Including "an organic for €5 with advice added. I have a minimum margin on my entry-level products. You have to relax and no longer be afraid of the wine merchant! In this area of students and families on a low budget, the voucher must remain accessible", he assures. Quite a commitment.

At 57, rue du Faubourg-Boutonnet Tuesday (4-8 p.m.) Sunday (10-1 p.m.) and Wednesday to Saturday (10 a.m. -1 p.m. and 4-8 p.m.).
