Caviar is perhaps the most important Russian delicacy! Pay tribute to him will be very soon in the Moscow restaurant “Fish dreams”. The Festival of caviar chef Andrey Fedoseev included in a special menu of dishes of fish, seafood, fruit and even meat! A key that open the taste will be different kinds of caviar.
Special festival set consists of six different dishes, and in a number of key ingredients – caviar, salmon, halibut, sturgeon, pike and even dried caviar plaice.
Starter – a sandwich with sturgeon caviar and salmon oil which are served at the restaurant from the chitin of crab. To enhance the taste of caviar and oil, they have dried oyster, smoked sour cream, rye crumbs and lemon brioche, grilled.
As a cold snack will be served tartare of beef with pickled yolk that is cooked at a low temperature. Even more unusual is the dish make crispy buckwheat, watercress mustard, nasturtium and dried caviar plaice.
This was followed by grilled cauliflower and pickled celery root. Cream of cauliflower and Bonito flakes accentuate the taste of the grill, and pike caviar will be the final touch.
Another appetizer is far scallop with cream of Jerusalem artichoke (also known as “artichoke”), green Apple, blanched Chinese cabbage Pak Choi, sour cream, vanilla and eggs halibut.
Main dish – roasted Murmansk cod with baked in the coals potatoes, sauce chitin-based shrimp and crab bisque and caviar chum salmon.
And for dessert – white chocolate mousse and matcha with a light and porous ice cream from the juice of Yuzu is a Japanese lemon, taste like a hybrid of lemon and Mandarin.
