A solo adventure

“I do everything, all by myself !”, exclaims Céline, smiling. And that's saying something: from fermentation to bottling, including deliveries that take her across Drôme, Hérault, Vaucluse and Gard, Céline stops at nothing to promote her artisanal kombucha. In a France where this fermented drink is only just beginning to make a name for itself, Céline, 48, is already in her second year of production. But be careful, this year is special: it's her first year alone after starting out as a couple. A challenge that she takes up brilliantly, while waiting for the end of the year to gauge her success and consider new expansions.

Before launching into kombucha production, Céline spent twenty-five years in aesthetics and well-being. A radical reconversion, motivated by her love for this age-old drink from Japan. “When you do sports, after the effort, you don't want a soda that's too sweet. I told myself that kombucha, full of probiotics and antioxidants, had to be on the menu”, she says. Kombucha, a drink of youth with multiple virtues for digestion and beauty, has become his new passion.

A 100% local and artisanal drink…

At Oly Kombucha, each bubble is the fruit of meticulous work. “I produce 500 liters per week, with the capacity to double if necessary", explains Céline. And everything is done by hand! From the cultivation of natural yeasts that she raises herself, to the selection of local ingredients, Céline invests body and soul. She is committed to local. Her kombuchas are available in CHR (Cafés, Hotels, Restaurants) and some grocery stores, but are also available for purchase online or directly at the brewery by appointment.

Oly Kombucha is also an explosion of flavors: pomegranate, Mojito, peach hibiscus, Moscow mule, and a limited edition verbena raspberry on sale until the end-of-year holidays. Céline has no shortage of imagination when it comes to renewing her range and seducing the most demanding palates. And that's just the beginning! With a meticulous schedule, Céline juggles between fermentation, deliveries, trade shows, and even social media management. “It's a full-time job”, she jokes, even though taking care of her “babies” yeasts and bacteria is much more than just a job, it's a passion. On the weekend of August 24, she will be at the Provençal market in Pont-Saint-Esprit, a perfect opportunity to meet this brewer like no other and discover her refreshing creations.

With her mischievous play on words inspired by "Holy Spirit", Céline has captured the essence of Pont-Saint-Esprit in her bottles. “Oly” is also a nod to a Hindu festival (“Holi”) where colors are in the spotlight, a symbol of the diversity and richness of this age-old drink. And she has no intention of stopping there. Céline has big plans for the future of Oly Kombucha, with the desire to democratize this drink “still too little consumed in France”.
