MISE À DAY

Nothing better than to indulge yourself with a beautiful bottle!

On this very cold Saturday, I offer you a superb Chablis produced by the small Domaine Chaffinch. The Pinson family, which has been producing wine for more than 350 years, owns a fine selection of premier crus, in addition to a large piece of land in the illustrious Les Clos grand cru. Christophe and Laurent can now count on the help of Charlène, the latter's daughter, in order to magnify the grapes spread over approximately 14 hectares.

From a very good vintage, we the wine smells tight at first, almost tense, then you feel it loosening up as it comes into contact with oxygen and its temperature rises. It surprises with its flesh, which gives it amplitude and density while grafting itself onto a saline and stony weave of the most beautiful effect. Flavors of pear, warm shellfish, river pebbles, humus. Long and complex, it can already be approached, but it should give its best after three to five years. Expensive, but the quality is undeniable.
