At 24, place de l'Hôtel de Ville, opposite the market halls, the famous Dassé house, producer of tielles, has been in Frontignan since June 2023. Françoise Garcia is the manager. " We opened here because many Frontignan customers no longer wanted to come to Sète and were asking us, she says.
The Dassé family has three stores in Sète, including one in Les Halles, but also in Montpellier, Balaruc and another in Mèze. Among the Dassé, since Adrienne Verducci and the first tie in 1937, there have been five generations.
At the start, the five children of Jeanine, daughter of Adrienne, were in the workshop on rue Révolution in Sète then scattered throughout the Thau basin, spreading out among the shops, the last of which was in Frontignan.
"My mother used black olives"
"All the olives are good. Afterwards, everyone has their own turn and their own way so that all tastes are satisfied. Everyone has their preference and the sun rises for everyone. I am from the upper district in Sète, my Italian mother put black olives in her bowl, recalls Françoise Garcia.
In the shop, the round pie garnished with octopus sauce has pride of place, but other products have their regulars such as the Catalan square (fresh tuna, chorizo, tomatoes and peppers in a fried dough), the eggplant coppa tart , allutielle (bread dough match with mixed tielle sauce), small octopus lasagna gratins or olive octopus (preparation of tielle with black olives in fried dough). " Allutielle is used for an aperitif. We try to innovate while respecting our roots and our origins, and promote them, explains the saleswoman.
< b>"Here, there is everything", says a customer
Since the opening of the store in Frontignan, advertising was done by word of mouth. Maddy, a regular, walks through the door: " I’ve been coming here since it opened in Frontignan. Here, there is everything: welcome, kindness, advice. Well, that’s a personal feeling. The welcome is not everything, you need the quality of the product and the products are great. In fact it’s a whole thing,” she concedes.
For Françoise Garcia, free parking in Frontignan also encourages travel to the city and remains an asset which should allow the shop to perpetuate its installation.
