The “La Talmelière” bakery wins a new distinction

Alice and Swan, happy bakers who are preparing for other competitions.

She took part in the departmental competition of the French Bakery Confederation.

Alice Benac and Swan Thonnat, the baker couple from La Talmelière, are once again in the spotlight. Indeed, the quality of their work is highlighted on two products: the croissant and the baguette, the essentials found on the French breakfast table.

A constant desire to improve

During the departmental competition of the National Confederation of French Bakery and Pastry, their butter croissant came in silver while their baguette came fourth. "These competitions allow us to stand out, explains Swan. We take on a challenge, we strengthen our skills, we enhance our occupation. And a price gives us better visibility. Why our artisanal butter croissant is a silver medalist ? Because it is made with AOP Charente Poitou butter, for the quality of the flakiness, well cooked inside, well honeycombed, crispy with a good taste of butter ."

The couple continually seeks to improve and will put the galette des rois, the traditional baguette and the butter croissant in the running at the food trade fair next September, hoping for new distinctions. In the meantime, they have changed their overly energy-intensive oven on Boulevard Gambetta because modern ovens consume less electricity, which will help limit the energy bill. They also put the dough mixer and bakery back into service at their bakery on rue Célestin-Arnaud in La Peyrade. They now have two points of sale and two points of production. And Swan concocts her "exotic flower" to present it to the Hérault Gourmand competition in March 2025. The entire Talmelière team is proud of these distinctions and is now turning to the next holidays, Ascension, Mother's Day, Father's Day, then summer which always brings its lot of tourists.
