"We really admire what they did"

The grinders and sanders are busy and good souls passing through, whether they are family or friends, are always ready to lend a helping hand. The young new owners give a little freshness to the former primeur which occupied these same premises before Yannick Chopin gave it a completely different look in 2010. "We're going remaining in the continuity of David and Greg, we are not going to change the recipe for something that already works perfectly, reassures Tony Condamines. They succeeded something exceptional and we are very admiring of what they have built."

Opening April 13

The two inseparable figures of the brand bowed out and signed the sale on March 28 with the new duo. The transition is therefore taking place slowly, but surely. "

“Develop the tapas menu”

In the boxes, more than a physical change of the establishment, the two "related bosses", as they are called, a few projects. "We would like to develop the tapas and wine menu", explain Jordan Bonneviale and Tony Condamines. But also themed evenings. "We would like to host Thursday evening evenings out of season, without necessarily it being festive but with different themes", adds Tony Condamines. 

For him, it’s almost a first experience in the restaurant industry. "I did a few seasons with my father (Jacques Condamines, Editor’s note), at the Hôtel le Cévenol but I will try to bring the things I learned in an environment that was different, explains the new boss of the hotel. business, who worked in the sports industry. There is a lot of apprehension, it would be incredible to think otherwise. But there's also a lot of excitement." Which his partner can't hide either.  "There is a bit of pressure given what David and Greg have done with Okfé. The business is already almost at its peak, if we do as well as them, it will already be very good."

"The best deal I could hope for"

For him, the situation is somewhat different. With his uncles, at the Golf Club, he cut his teeth behind the bar during big serves before joining the Okfé team. &quot ;I've wanted to start a business for years and I never had the opportunity or when it presented itself, it didn't happen , admits the interested party. David and Greg trusted us and it’s the best deal I could hope for in Millau .
