“We haven’t changed anything”: the gourmet area of the Millau Viaduct finds its famous Capuchins

Established since April 1, Stéphane Camberlin is at the head of the gourmet space in the Millau Viaduct area. "A true honor" for Saint-Affricain which also owns the Combalou restaurant in Lauras.

Occupied for 16 years by the Bras family, taken over last summer by the Gineste couple, the gourmet space in the Millau Viaduct area is now in the hands of Stéphane Camberlin, owner of the Combalou restaurant in Lauras, recently selected by the Department to revive the restoration point of the emblematic building of South Aveyron.

Since April 1, the Saint-Affricain has perpetuated the long tradition of Capucins Bras, these tasty cone-shaped pancakes, cooked with buckwheat and rye flour, cooked on the l  rsquo;instant and garnished with local products. Because if the chefs of Aubrac left the space vacant for a few months, their concept of “fast cook” ultimately survived them.

Stéphane Camberlin having become the first to suggest that they offer the recipe under a white label. "I forced fate a little", rewinds the forty-year-old who before applying for the takeover of the gourmet space contacted André and Sébastien Bras to submit this idea to them.

A risk-taking paid off, the André and Sébastien Bras having been seduced by the enthusiasm of this outstanding entrepreneur. "I was very well received. André and Sébastien are of great simplicity and remarkable generosity. They are very human!"

"I still can't believe it"

At the helm of the gourmet space for the next three years, as indicated in the contract which now binds him to the Department, Stéphane Camberlin is enjoying it. "It’is a true honor to continue the work of Les Bras in this essential place of the attractiveness of South Aveyron".< /em>

Each year, nearly a million people stop off in the emblematic area of the A75. In 2023, more than 5 million vehicles will also use the Saint-Germain toll barrier.

In 2013, 35,000 capuchins were served in the seven months the place managed by Michel's brother, André Bras, was open.

Figures that make restaurateurs dizzy. "I still can't believe it. The Viaduct has an incredible power of attraction, recognizes Stéphane Camberlin who is betting even more on that of the Capuchins which he now offers à la carte. Without major changes. Why distort a winning recipe ?

Neither the spirit nor the prices

"We haven’t changed anything. Not even the prices! Everything is strictly identical to what the Bras family offered for 16 years. Capuchins made with Aveyron products only. Until the coffee, which is certainly not produced in the department, but which we buy at Cafés Richard… Who, like everyone, knows of Aveyron origins!"

On the schedule side, again nothing new. "During the 7 months of annual operation, we will be open every day . Currently from 9 a.m. to 6 p.m. During the high season, from June 15 to September 15, we will open earlier, around 8 a.m., to close around 9 or 10 p.m., announces the new operator.

A daily presence which, for one summer, was missed by motorway users forced to swallow their saliva for lack of a successor to the Bras family. Stéphane Camberlin now fills this void… with a concept developed by the Bras family. The circle is complete.
