Le centre de formation des apprentis (CFA) de la chambre de métiers et de l’artisanat de la rue de l’Apprentissage, à Mende, modernise ses installations, notamment son hall d’accueil et son atelier boulangerie-pâtisserie.

Florence Vignal, president of the Lozère Chamber of Trades and Crafts, and Samuel Pouvreau, director of the apprentice training center (CFA, officially CMA Formation Mende), organized a site visit on Wednesday, September 18, 2024, in the presence of Philippe Castanet, prefect, Guylène Pantel, senator, and Patricia Rousson, elected representative of Mende. The idea was to take stock of the work in progress concerning the adaptation of the facilities to apprenticeship courses, in particular bakery and pastry making. A 2.50 million euro project, supported by the State and local authorities.

A drawer effect to modernize the installations

Formerly the painting and roofing workshops (transferred to the new hub in 2015, Editor's note), the 300 m2 of unused space in the apprentice school building are undergoing a complete transformation. Starting next year, the place will become the bakery and pastry workshop for future professionals: “It's a drawer operation. The current bakery and pastry workshops will become, in particular, the administrative sector,” explained Vincent Vanel, the project's architect. These new locations will correspond toto the needs of the CFA in relation to the growing demand for apprenticeships, both young people and adults." In keeping with the times, the center is welcoming more and more people in retraining.

“The idea is also to reuse the current premises of the bakery and pastry shop. One part for the butcher's shop, in particular the delicatessen and catering section, and the other for reception and administration, which will also allow us to expand the boarding school”, explained Florence Vignal. A snowball effect that will allow the school to optimize its land. And to avoid disrupting the learning cycle too much, a precise schedule has been thought out: "We are framing the work phases for this, in particular with school holiday periods." The ensemble should take off in the fall of 2025.

Returning upstairs for the speeches, the delegation had a nice surprise, unveiled by Florence Vignal: “We discovered the first stone of the CFA, built in 1980. Inside, there was a pewter case with the parchment of the time, its tricolor ribbon, signed by the hands of Maurice Charretier, Minister of Commerce and Crafts (under the government of Raymond Barre, Editor's note).Philippe Castanet and Florence Vignal have, in turn, signed a new parchment to symbolize the work in progress, before putting back the period and current parchments, in the case, with their respective ribbons, and replacing it in its stone case. For a piece of eternity, certainly.
