À Frontignan, Léo Martinez de La Fournée Gourmande a réalisé un gâteau de près de 5 kg.

Sunday January 14, La Fournée Gourmande welcomed its customers with a nice surprise: a giant kingdom! Just like the galette des rois, this round brioche cake flavored with orange blossom essence and decorated with candied fruits supposed to represent the jewels in the crowns of kings, is eaten to celebrate Epiphany, a Christian festival which celebrates the visit from the wise men to the Child Jesus.

"I worked all night"

Léo Martinez, the baker boss, made a large one and offered it to these loyal visitors. "I worked all night but I'm happy to be here again this morning to meet my clients and offer them this giant kingdom. It’s a way of thanking them for their loyalty. When you taste it, it’s risk-free, you know it’s good."

The kingdom thus offered for tasting is imposing: 90 cm in diameter, 4.5 kg of dough, 1.5 kg of high quality candied fruits (clementines, apricots, pears, cherries, pineapple, orange, angelic). Léo is satisfied with the result: the brioche is supple and nicely honeycombed, it's a success!

And everyone enjoys tasting this crown which is diminishing visibly . "It is really very appetizing, notes a lady with her arms full of pastries. It’s a great initiative, and giving us a piece of it is a nice way to thank us." In the store, kingdoms and galettes des rois share space in the window. During the month of January, La Fournée Gourmande produces 60% kingdoms and 40% frangipanes. The kingdom can be plain or filled: pastry cream, whipped cream or mousseline, everyone has their preferences. At La Fournée Gourmande, we should make them until the end of the month depending on demand.

Throughout the year, Léo and Philippe are at bakery, while Gaby and Stéphanie serve various breads and pastries in the shop. Like many bakers, Léo Martinez saw his electricity bill soar: "The increase in electricity costs me the salary of a worker! From €1,700, it increased to €5,000. Despite this, we try to provide fresh bread from the oven all morning to satisfy customers."
