Alexandre Savoie, self-taught sommelier and fervent fan of cooking over a fire, made his dream come true with the opening of Braise in October 2019. Unfortunately, the project was delayed due to confinement. Thus postponing the official opening to June 2020.

The history of Braise goes back a long way. When Alexandre, from a very young age in Montreal, enjoyed barbecues with his father. His interest in the cuisines of the American South, focused on long, smoked cooking, developed as a teenager. For over 25 years, he perfected his culinary art, passionately merging fire cooking with his sommelier skills.

His journey into the world of wine began two decades ago in Spain, where the discovery of Rioja captivated him. Unfortunately, an intolerance to additives present in industrial wines pushed him to restrict his consumption. However, encouraged by a friend 14 years ago, he explored the pleasure of tasting quality wines. Which opened up new horizons for him. Subsequently, he moved to Paris to be closer to winegrowers and to fully live his passion.

Braise is the perfect marriage between the cellar and the wood fire, his two passions. The restaurant offers a unique experience where fire is seen as a source of heat, at the center of the experience, offering a variety of dishes from flame, ember and slow cooking, including bold vegetarian options .

Constantly adapting, Braise offers varied menus, weekly choices for lunch, à la carte options or an evening tasting menu. Chef Adrien Clerget offers guests an unrivaled culinary exploration.

Alexandre Savoie recommends a logical approach, where the power of the dishes guides the choice of wines, while encouraging guests to explore new regions and emerging winemakers.

Braise is not limited to the gastronomic experience and offers oenology courses. In addition, the restaurant offers catering services for private events.

Alexandre Savoie is considering opening a wine bar or expanding its days of opening.
