Thibaut Lefils in Montpellier: “I try to remove sugar and fat from my pastries”

Le jeune pâtissier sera un des deux parrains du 10e Salon de la nutrition de l’EDNH de Montpellier, ce samedi 16 mars, au côté du handballeur Valentin Porte.

Thibaut Lefils was a notable character in season 12 of Best Pastry Chef, on M6. His illusions allowed him to reach the finals of the show. His interest in nutrition and baking led him to say yes to the student organizers of the show.

Are you able to reconcile nutrition and baking ?

Nutrition is how to eat to be healthy, while baking is about having fun. I try to reduce sugar and fat, but only for taste reasons. De-sweetening is very trendy. I take it as a technological challenge, a challenge to take up.

What will be the theme of your masterclass ?

Lemon tart with whipped ganache, that is to say a mixture of chocolate and cream that I replace with milk. I will replace the butter with olive oil, and I will add gelatin and pectin for creaminess. As a result, we will smell more of the lemon which is less hidden by the butter. I also add fruit juice, which ultimately results in a less fatty dessert.

Is cooking still so trendy ?

Yes, it’s even booming. TV shows make you want to cook. And products like couverture chocolate (less sweet and ideal for coating) and pectin, which were previously reserved for pastry shops, can now be found in supermarkets and on the internet.

The 10th EDNH Nutrition Fair

More than 3,000 visitors were welcomed during the first nine editions of the EDNH Nutrition Fair (School of Dietetics and Nutrition) in Montpellier.

For this 10th edition, two days will be reserved for schools (this Thursday 14) and professionals (this Friday 15), the general public being expected this Saturday March 16 from 10 to 6 p.m.

Conferences:

10 h – 10:45 a.m.: The influence of social networks on eating and sporting behavior.

11 a.m. – 12 p.m.: The impact of children’s overexposure to screens.

1 p.m. – 2:30 p.m.: Masterclass by Thibaut Lefils (read above).

15 h – 3:45 p.m.: Optimize your daily diet to improve your sporting performance.

16 h – 4:45 p.m.: Combining nutrition and physical activity.

Does sport play a big role in your life ?

Oh yes! I started in sixth grade because I had weight problems, and I haven't stopped since. I completed a Staps degree (sciences and techniques of physical and sporting activities) and I did fifteen years of judo. Today I have pull-up bars at home.

Does sport help you eliminate ?

Yes, it helps me make up for all the cakes I have to eat! I am very greedy and I sometimes overdo it. So I give some to family, friends…hellip;

Is it a pleasure to cook live ?

Yes, it's a change to post messages on social networks! Cooking live, I’ve done it five or six times. I prepare everything beforehand and spend an hour on site, with small quantities, explaining as I go. And everyone leaves with a treat. I will also have a stand with cookies and cupcakes at the show all afternoon.
